About Bal Mithai:-
It is a brown chocolate- like fudge made of roasted "khoya" and coated with white sugar balls. This Sweet is very popular in Uttarakhand, it has become a part of the culture of Uttarakhand people. It is very easy to make this at home without many efforts.
It is also narrated in many Kumauni folk songs also termed as "The State Sweet of Uttarakhand". Here I am going to share this Authentic recipe of Bal Mithai.

Here is how to make it:
Ingredients:
For Bal Mithai:
- 2 cups khoya (milk solids)
- 1/2 cup powdered sugar
- 1/4 cup cocoa powder (for chocolate flavor, optional)
- 1/4 teaspoon cardamom powder
- A pinch of nutmeg powder (optional)
- 2 tablespoons ghee (clarified butter)
- 2-3 tablespoons milk (if needed)
For the Sugar Coating:
- 1/2 cup granulated sugar
- 1/4 cup water
- 1/4 teaspoon lemon juice
Instructions:
1. Prepare the Khoya Mixture:
- Heat a non-stick pan or a heavy-bottomed pan on low-medium heat.
- Add ghee to the pan and let it melt.
- Add the crumbled or grated khoya to the pan.
- Keep stirring continuously to avoid burning.
- Cook the khoya on low heat for about 10-12 minutes until it changes color to light brown and starts leaving the sides of the pan.
- If you're making chocolate-flavored Bal Mithai, add cocoa powder at this stage and mix well.
- Add the powdered sugar, cardamom powder, and nutmeg powder to the khoya mixture.
- Continue to cook, stirring continuously, until the mixture thickens and forms a soft dough-like consistency.
- If the mixture is too dry, add a little milk, one tablespoon at a time, and mix until it reaches the desired consistency.
- Remove the mixture from heat and let it cool for a few minutes.
2. Shape the Bal Mithai:
- Grease a plate or a tray with ghee and keep it ready.
- Once the khoya mixture is cool enough to handle, divide it into small portions and roll them into small balls or oval-shaped pieces. You can make them bite-sized.
- Place these shaped pieces on the greased plate or tray, leaving a little space between each piece.
3. Prepare the Sugar Coating:
- In a separate pan, combine granulated sugar and water.
- Bring the mixture to a boil over medium heat.
- Add lemon juice (to prevent crystallization) and reduce the heat to low.
- Continue to simmer until the sugar syrup thickens slightly, forming a one-thread consistency. To test this, take a small drop of syrup between your thumb and forefinger; if it forms a single thread when stretched apart, it's ready.
- Remove the sugar syrup from heat and let it cool slightly.
4. Coat the Bal Mithai:
- Pour the warm sugar syrup over the shaped Bal Mithai.
- Gently rotate the plate or tray to coat each piece evenly with the sugar syrup.
- Allow the Bal Mithai to cool completely, and the sugar coating will harden.
5. Serve:
- Once completely cooled, your Bal Mithai is ready to be enjoyed.
- Store it in an airtight container at room temperature.
Bal Mithai has a unique texture and flavor and makes for a delightful treat for special occasions or festivals.
